No need to bake a huge dessert just for two. Great for keeping on hand for a quick tea-time bite. This cake is so easy and versatile, it just might unleash your baker’s imagination juices. But be careful, it’s so good, you just might not want to share.

Tips: Use small-medium fresh oranges for best zest. They should smell like oranges. Wash citrus well, some have a wax coating. Save the juice for glaze.
