Harvest Fresh Roasted Veggies

Ah, the fall harvest has begun. A wonderful time of the year to enjoy more fresh from the farm veggies. This time saver dish idea is fun, versatile and oh so tasty. Take your children next time you venture to your local farmers market and let them pick out their favourite vegetable.  Select a variety of different colours and sizes. Toss with a little neutral oil like canola or sunflower just to coat. Let the flavour of the vegetables take front place and not the oil. Grill them up or roast them in the oven until tender. Salt and pepper to taste. Makes a delish entrée or side salad  . Chop-up leftovers [if any] and make a great vegetable frittata for next day lunch or dinner. You could also blend the leftovers, add a bit of stock for a fabulous homemade soup. Let your imagination and taste buds grow!
