Remove from ice bath and using a paper towel, gently wipe the skin off . Blend all the apricots and dressing ingredients together until smooth. Adjust salt/pepper to taste. Set aside.
In a large bowl, toss the thinly sliced fennel and pears with the juice of 1 lime. Shred the fronds with your fingers and scatter on salad. Cover and refrigerate until ready to serve.
Dressing: When ready to serve, heat for 30-40 seconds in microwave or on stove-top just until warmed thru. Salad: Remove from refrigerator and serve with warm dressing on side. Pairs beautiful with your favourite grilled fish or pork.
Tips-Check your local farmer’s market for the main ingredients. All the prep can be done several hours ahead of serving. You can leave out the pepper for those in your family that don’t enjoy spicy. It’s wonderful either way. Great as afternoon snack too.
