Easy Crisp Fall Salad

The first signs of fall are begging to show. Great garden harvests can deliver an array of easy and delish creative food ideas for your family. Give this sensory delight salad a try.

Fennel and Pear Salad with a warm Spicy Honey-Apricot Dressing:

Salad Ingredients:

  • 1 lime
  • 1lg florence fennel- sliced very thin
  • 2 med bartlett pears- cored,sliced very thin
  • Few sprigs of the fennel fronds

Dressing:

  • 4 Apricots- halved,blanched,peeled
  • 3Tsp Rice-wine vinegar
  • 2Tsp honey
  • 1tsp fresh ground pepper
  • pinch salt

Prep:

Halve the apricots and remove the seed. Blanche in boiling water for 30-40 seconds to make peeling off the skin easier. Carefully remove from boiling water and place in a bowl of ice water. Remove from ice bath and using a paper towel, gently wipe the skin off .  Blend all the apricots and dressing ingredients together until smooth. Adjust salt/pepper to taste. Set aside.

In a large bowl, toss the thinly sliced fennel and pears with the juice of 1 lime. Shred the fronds with your fingers and scatter on salad. Cover and refrigerate until ready to serve.

Prepare:

Dressing:  When ready to serve, heat for 30-40 seconds in microwave or on stove-top just until warmed thru. Salad: Remove from refrigerator and serve with warm dressing on side. Pairs beautiful with your favourite grilled fish or pork.

Tips-Check your local farmer’s market for the main ingredients. All the prep can be done several hours ahead of serving. You can leave out the pepper for those in your family that don’t enjoy spicy. It’s wonderful either way. Great as afternoon snack too.
